Family Size Burrito Recipe

Here's the recipe for the family size burrito that I will be making tonight.

Family-Size Burrito
serving size - 8

Ingredients:

2 plum tomatoes, thinly sliced (about 16 slices)
1 ½ lbs browned ground beef (or 3 cups diced cooked chicken)
½ cup chopped onion
¾ cup thick and chunky salsa
1 ½ cups shredded Mexican Cheese blend
4 burrito-size flour tortillas
1 can refried beans
1 pkg taco seasoning

Assorted toppings: shredded lettuce, sliced pitted black olives, sour cream

1. Preheat oven to 425 degrees.


2. Brown ground beef and prepare with taco seasoning according to package.
If you choose to use chicken, make sure you chicken is diced and cooked.


3. Combine ground beef (or chicken), onion, salsa in bowl. Microwave the mixture 3-4 minutes or until hot, stirring occasionally. Stir in ½ cup of cheese.

4. Arrange tortillas in an overlapping circular pattern on baking sheet or large round stone, covering entire surface. (Tortillas will extend off edge of sheet/stone.) Starting in center, spread refried beans over tortillas, forming a 10x10-inch square.

5. Spoon meat mixture evenly over refried beans. Fold edges of tortillas up over meat mixture in a envelope pattern.

6. Arrange 16 tomato slices in rows over top of burrito. Sprinkle remaining cheese over burrito, covering completely. Bake 20-25 minutes or until cheese is melted and edges are browned. Cut into rectangles; serve with assorted toppings.
