Menu Plan Monday - 9/15/2008

WOW! What a week! I did really good menu planning but really bad following the menu plan. My fiancé got was out of town until Thursday; he was supposed to be back Monday or Tuesday night. We decided to give eating dinner out as stab while my fiancé was gone. I had $20 extra dollars to go towards eating out plus coupons! We ate at Applebee’s on Sunday (finished off a gift card we had), Bob Evans (2 Free Kid Meal coupons), and Buffalo Wild Wings (Good Student $10 coupon). We came in just under $20 and it included all the tips left for the waitresses.

This week my fiancé is out of town until Wednesday. We have soccer practice on Monday and a game about 45 minutes away on Tuesday so dinner will be easy to fix meals…not necessarily health but quick and easy. Other than that, my week is full of recipes. I am also going to try to put together two freezer breakfasts this week for Saturday and Sunday morning since we have a jam packed weekend ahead of us.

Here’s my plan for this week…

Freezer Breakfast to make this week – Freezer French Toast from Lynn’s Kitchen Adventures and Sausage Breakfast Casserole

Sunday: Popcorn Chicken & French Fries

Monday: Pigs-in-a-blanket, mac & cheese (Could change to spaghetti, meatballs, garlic bread and salad since my parents are without power and could be for a week)

Tuesday: Cheeseburgers, pasta salad, chips

Wednesday: Stuffed Shells (will post recipe as soon as I get it from my fiancé), salad, breadsticks

Thursday: Chile Chicken Enchiladas

Friday: Southwestern Casserole (freezer meal)

Saturday: Easy Baked Manicotti

Sunday: Chicken Patties, Mashed Potato Skins, green beans

Your chili chicken enchiladas & southwestern casserole both sound fantastic! I think I'll have to have something similar to at least one of them next week.
