Day 89, Food and Exercise Log

Ugh, I feel so drained! I need a day off work!

What an "expensive" dinner - 14 points! I really need to get better and not worry about what other's eat. I don't have to eat the same thing.

Overall thought: Well, I could have done better on the food category today. Like I've said before I am always SO hungry on Fridays. I don't know why either. I did pass on a Reese's Cup Blizzard. I had ordered it then refused to eat it...someone around here will eat it. So, I did do something good with my food choices, I guess. My fitness levels were up today. In the past, I wouldn't do ANYTHING on Fridays. It would be home from work and hit the couch!

Fitness on Friday - 5/9/2008

It’s that time again – Fitness on Friday over at Bye Bye Fat Mom. This past week was an “ok” week for me. Ok that I lost 1 pound but I wasn’t happy with the decrease in working out. I’m starting to lose motivation. I just keep telling myself – I didn’t gain this weight over night and it’s not going to all come off over night (but it would be EXCELLENT, if it did!).

I’ve still go some schedule work that needs to be done. I need to come up with 2 workout schedules – 1 for a somewhat normal week and one for Saturday soccer rain outs. I need to start the fitness classes that I have been talking about for 3 or 4 weeks. With vacation 4 weeks away, I really need to get focused and start working harder on my workouts!!

This weekend is the Rascal Flatts concert and we plan to go to dinner beforehand. I’ve already looked over the menu as I did last Friday night (read about that here) and know what I am getting. Since we will not have kids on Sunday morning, my fiancĂ© will want to go to breakfast (have what I am eating planned just in case) and then probably cook an unhealthy delicious meal for Mother’s Day.

Hopefully, everyone is on the right track to reaching their weight and fitness goals! Happy Mother’s Day to all the moms out there!

Recipe: Cheesy Chili Enchiladas

Ingredients:
2 – 10oz cans Old El Paso Enchilada sauce
2 - 15 oz cans Hormel Chili with Beans (don’t like beans? Use the Hormel Chili without Beans)
1 – 11 oz can Green Giant Mexicorn, drained
1 cup Shredded Cheddar or Mexican Cheese
4-6 burrito size flour tortillas (can use 12 taco size)
Sour cream (optional)

Directions:
Preheat over to 350.

Spread one can of enchilada sauce over bottom of 9x13 baking dish. In a separate bowl, combine chili, Mexicorn and ½ cup of shredded cheese. Spoon some chili mixture down the center of each tortilla. Roll up each tortilla; place them in the baking dish next to each other. Pour remaining enchilada sauce over tortillas. Sprinkle with remaining cheese. Cover with foil. Bake until bubbly, about 30-35 minutes. Remove foil; bake 5-10 minutes. Top with sour cream.

Note: You can use more cheese, I did!

Free Bowling

There are several ways to get your coupon for a free game of bowling. The coupons must be redeemed at Strike Ten Entertainment centers and are only valid between the hours of 8:30am and 6:00pm when lanes are available and unreserved (excludes holidays).

Banquet frozen foods have coupons for free bowling coupons on specially marked packages. The coupons expire on May 31, 2008.
